Well, this is the desktop version, so it might be different for you.

Also, on closer examination, it's only the genres that iTunes doesn't allow you to edit. I thought it was every field, but I was looking at items on the cloud when I did my tests. Items on the hard drive are still editable.

But, yeah, I use Google Music too. It even allows me to edit titles, genres, etc. on the cloud.
