I came across this video on BBC News that's primarily about video meetings, but they also talk about editing videos in the VR workspace in the second half. Sorry I don't know how to embed the video directly.

I have seen mention of similar uses of VR meetings in the automotive world. They are starting to use VR for designing instead of just CAD and/or clay models. The tech is now starting to find useful applications outside of the novelty and game phases.
