No matter what format I output to, Vegas seems to be stripping my video of blacks and replacing them with grays, even though the preview while editing looks fine. Any ideas?

Have you set your monitor graphic properties right? Sometimes high brightness can cause black to appear gray. Also check your LCD/CRT monitor for its properties...

also, note that Vegas only operates in an RGB environment. Check your input and output video settings and make sure you are not swapping colorspaces.

This is the more likely scenario. The more important thing than how it compares to your preview window is how it compares to the source material. The preview window can potentially appear darker than actual. Do a test comparison of a scene from the source that is rendered through your workflow to the final output unchanged. Then you will know whether or not your workflow is misinterpreting the RGB levels at some stage.

Or, more simply, change your project properties to 32 bit floating point video. In all likelihood that will solve your problem.
