For those of us out there that do not have Duel Layer DVD burners, is it possible to split a VTS file between two dvds? Or any other way to burn extra large files onto single dvd?

yes, DVD FAB PLATINUM can do that (split to 2 discs).
This option should be taken into consideration, when the movie is longer than 180 minutes or has any extras that should be kept, which would drop the quality of the video image below 50%.
If the image quality is above 50-80% I suggest to use DVD Rebuilder and for shrinking quality above 80% DVD Shrink (with deep analysis) to shrink the DL to SL.

How is DVD Rebuilder to compress, say a 6gb files down to SL? I am thinking of starting a new project (EE of TPM) but compression is a hurdle...

It is the perfect tool for the job, beckmen, but only if you use it with CCE and a mutlipass setting of at least 5.
It does actually not so much depend upon the filesize of the movie, but on its length and on the amount of extras.
